Sweet Potato Brownie

This is another firm favourite in our house.. A friend of mine told me she makes a big batch and freezes them then takes out a square for her sons lunch box and its lovely.. I haven't tried them frozen.. they never last that long with 3 boys..
1 cup mashed sweet potato
1 cup gluten free flour
1 cup coconut sugar
1/2 cup cacao powder
200ml coconut cream
1 tsp vanilla powder
1/2 tsp bicarbonate of soda
Blend in food processor and pour into pan that has been greased with coconut oil and cook for 30mins at 160 or till cooked through
