Berry cheesecake
I love growing and foraging for food. This cake was made for my husbands birthday and has a selection of our own berries grown in our garden, a friends berries and some foraged ones too. It was amazing and went so quickly
here is how to make it xx
Base
1 cup hulled hemp seeds
1 cup cashew nuts
1 cup puffed rice
1 cup dates
3 tbs water
Place nuts, seeds and dates in food processor and whizz until well mixed then add in the puffed rice and water and briefly whizz until you have a mixture that will hold into a ball. Pour into a silicone tray and press down firmly to make a base
Vanilla layer
2 cups of pre soaked cashew nuts
1 small tin of coconut cream
1 scoop of enrichd vanilla protein powder
Whizz only blender until smooth and creamy
Pour a small layer of it onto the base saving the rest for the next layer
Place a layer of fresh berries onto the vanilla layer - I used red currants, raspberries and strawberries
Berry layer
Add a cup of mixed berries to the vanilla layer and blend. Pour onto the vanilla layer and place in the freezer to set for 1 hour (or until you want to eat it)
Decorate with berries
Take out of freezer 30 mins before eating
